Business Spotlight: La Posta De Mesilla Restaurant & Cantina

85 Years of Flavor, Family, and Tradition      

In 1939, while the world watched WWII unfold and The Wizard of Oz and Gone with the Wind lit up theaters, Mesilla, New Mexico made history of its own—when 25-year-old Katy Griggs opened a “little chile joint” called La Posta.

What started with four tables on a dirt floor, Katy’s mom cooking in the back, and free bowls of tostadas and chile (what we now call chips and salsa!) quickly became a local treasure. From presidents to Hollywood stars like Val Kilmer, Sheryl Crow, and Sam Elliott, La Posta has welcomed guests from all walks of life—many of them coming back again and again.

Even the U.S. Navy took notice. The galley aboard the USS New Mexico submarine was proudly named after Katy’s chile joint—a piece of Mesilla sailing 3,000 leagues under the sea.

Today, Katy’s great-niece Jerean Camunez Hutchinson, her husband Hutch, and their children Christopher and Elena carry on her legacy. With faith, community spirit, award-winning margaritas, and unforgettable New Mexican cuisine, La Posta has been named one of USA Today’s “Ten Great Restaurants for Mexican Food” in America.
